I'd like to share the text of the official Sorana Bean promotion with you - they say it so much better than I ever could...
"Every typical Tuscan product has a story to tell, a “fable” studded with ancient marvels, dark periods and famous persons who have sung their praises. The Sorana bean is one of these. As with all rarities it has given rise and indeed still does to the curiosity of the most attentive gourmets who are capable of doing anything just to get the smallest taste of it. It is practically impossible to explain the reason for this “devotion” without first tasting the precious pulse: its soft and heavenly pulp together with its strong and at the same time elegant taste are enchanting. The reason behind all this goodness is the extraordinary microclimate in the area where it is grown: an area clinging to the hills of Pescia in the province of Pistoia whose rain and climate made mild by the sirocco winds make the ideal habitat for cultivating the bean. The landscape is also beautiful from an aesthetic point of view and the place where the celebrated bean is grown measures little more than ten hectares and it is taken care of like the most prestigious French vineyards. It is located in such a dense green wood that Jean Charles Sismondi renamed it the “Pescian Switzerland” where the extremely tall bean plants rise out of the trees. A spell cast by nature that gives birth to fruits as precious as gold."
