The Melata is something that I have never come across before. It is made by the bees stealing the sweet deposits of other insects who also store plant sugars. The bees then process this sugar into honey and the result is truely a honey that tastes just like caramel.

The Melata is a Honey from uncultivated and forested zones and is the last product of the summer season.

This rare honey is highly prized because it is so hard to come by.

We have now have a small stock of the 2010 harvest directly from the village of Sorana in Italy.

There is no disputing that Sorana beans are the best.

These beans are delicate and have a fabulously thin skin so that eating them is a joy... but then again, we do live in the land of the mangiafagioli (Bean eaters) - otherwise known as Tuscany.

It is extremely difficult to find these beans for sale on the internet or anywhere else... even in Tuscany there is a scrap at bean harvest between buyers from all over Italy.

Truly they are a gourmet's rare delight.
